We were delighted that Award Winning Chef, Alan Foley, took the time to talk to us at the highly regarded Step House Hotel earlier in the year.

This Georgian Hotel, situated opposite the entrance to Borris House, has been run very successfully by Alan’s family for decades and it is a favourite venue, known not just for its luxury interior, fabulous food and beautifully designed garden but also its welcoming atmosphere.  

Your family have owned the STEP House hotel for some time. It has been through many evolutions over the years – what do you think is the secret ingredient in retaining its charm and its 4* status?

If you had to describe the Step House in three words, what would they be?

Charming, elegant, deceptive

Your food and the menus at the Step House are renowned – if you had to describe your culinary ethos what would it be?

We are passionate about the food we produce we have huge respect for local producers/suppliers

Your mother, Cáit Coady, had an extraordinary vision for the garden – what inspired her and how long did it take to complete the recent redesign?

Her love of plants/shrubs and keen eye for design- ongoing project together with her team Jody & Anne.

Your family have put a great deal of thought into the interiors of the Step House – which room in the hotel are you most proud of?

No two days are the same-Getting to work alongside like-minded individuals.

What are three must-see places in County Carlow you recommend to your guests?

The viaduct in Borris/Clashganny/Altamont Gardens
